VEGAN DUCK SALAD

Your friends won’t believe that it’s vegan.

When I was younger, I was always on “salad duty” for dinner. My siblings would often do the classic ‘lettuce, tomato and onion’ and don’t get me wrong, that can be great, but I always enjoyed something a bit heartier. 

Fast forward many years (and trying to implement more of a plant-based diet) my new fave hearty ingredient has to be mock-duck.  Easily found these days both at Woolies & Coles, this magical faux meat is quickly becoming the staple in all of my stir fries, wraps, and of course…salads!  Try it for yourself and thank me later.

SALAD INGREDIENTS

  • 1 Pack of Vegan Roast Duck (we like Plant Asia from Woolies)
  • 1 Cup of Brussels Sprouts
  • 2 Cloves of Garlic
  • Vegan Butter (Nuttelex Buttery is our fave!)
  • 2 Lebanese Cucumbers
  • Pack of Alfalfa Sprouts
  • A Punnet Cherry Tomatoes
  • 1 Red Capsicum
  • 1 Small Red Onion (thinly chopped)
  • Pepitas (garnish)

MARINADE

  • 3 Tbsp Soy Sauce
  • 3 Tbsp Olive Oil
  • 1 Tbsp Sesame Oil
  • 4 Tbsp Kecap Manis
  • 2 cloves of Garlic (chopped finely)
  • 1 Tbsp Ginger (but the more the merrier!)
  • 1 chopped Fresh Chili or Chili Flakes (optional)
  • Juice of 2 Limes
  • 1 tsp Coconut Sugar (or preferred sweetener)
  • Liquid Smoke (optional)


METHOD

  1. On medium heat cook 2 tbsp of oil in a pan.  Once oil is hot, add the Vegan duck. Fry each side until golden and crispy.  Remove duck from pan and chop into bite sized pieces. 
  2. Create your marinade.  Place all marinade ingredients into a jar and shake to incorporate.
  3. Add the duck back into the pan and pour over the marinade. Reduce until the duck is nice and sticky.
  4. While the duck is reducing, chop your garlic and brussels sprouts. In another pan cook the garlic in Nuttelex for 3 minutes on medium heat.  Add the chopped brussels sprouts.  Cook for about 8 minutes or until almost tender. Season with salt and pepper. Remove from heat.
  5. Chop remaining salad ingredients and add to a bowl. Top with cooked brussels sprouts, vegan duck & Pepitas.  Voila!
